Research on increasing the extraction yield of gelatin from Pangasius hypophthalmus by ultrasonic

Abstract

This study is conducted to determine the appropriate extract conditions using ultrasonic technique to improve gelatin extraction efficiency from Pangasius hypophthalmus. Catfish skin was collected from Song Tien fishery joint stock company - Chau Thanh district - Tien Giang province, followed by pre-treatment, demineralization and gelatin extraction using ultrasonic technique under conditions of different temperature, ultrasonic capacity and time. The results show that catfish skin extracted with ultrasonic at temperature of 45oC, capacity of 150W in 2 hours get the best hydroxyproline recovery and 33,58% higher compared to the extracted-without-ultrasonic sample. This finding confirms the application of ultrasonic technique in gelatin extraction which not only significantly enhances gelatin extraction efficiency and reduces the production cost, but also promotes gelatin industry to develop in an eco-friendly and sustainable way. More in-depth studies are needed to investigate the effect of ultrasonic on gelatin quality, optimize ultrasonic extract conditions for catfish skin, and expand research on other materials.
