RESEARCHING ON LIPID EXTRACTION FROM RICE BRAN USING ENZYMATIC TECHNOLOGY

Abstract

Vietnam’s annual output of rice bran comes in huge amounts, but the most part is used directly without being processed. Rice bran oil obtained in the separation of lipids from other bran components is a processed product with high nutritional value. The purpose of this study is to present an investigation to find out appropriate enzymes to separate lipids from rice bran, and to optimize the process with selected parameters. The combination of enzyme Alcalase 2.4 LFG and Viscozyme L has proved to result in the highest efficiency. An optimization model has been proposed to investigate the influence of the concentration of Alcalase 2.4 LFG, Viscozyme L and reaction time on the capability of extracting lipids from bran. The results show that the highest efficiency of lipid extraction is obtained when the concentrations of Alcalase 2.4 LFG and Viscozyme L are 1.288% and 1.8931% respectively, and the reaction time is 8.1078 hours.
